They are characterised by the right firmness, flavour and selected size
For pancakes and fries, we choose types B and BC cooking potato varieties. This guarantees the best flavour and texture for fries and pancakes. The high starch content and low water content mean that the fries and pancakes are perfectly crispy on the outside and soft on the inside.
